Sodium nitrates and sodium nitrites

Almost every packaged meat has Sodium nitrates or Sodium nitrites these days.
There is solid evidence that consumption of processed meats cured with nitrates/nitrites is linked to a higher, about 32%, risk of certain cancers, especially colorectal.
There are plausible biological mechanisms (nitrosation → NOCs).

At the same time, the evidence is less clear for naturally occurring nitrates, e.g., from vegetables, such as celery salt.

Eating antioxidants helps mitigate some of the risk.

What are states of consciousness?

After four meetings in a row, I had the need to get out of the office and go to Redmond French Cafe.

The “Croque Madame” plate is not the best nutritionally, but it is definitely deep in the “comfort food” category. It tastes great!

I wanted to write about different states of consciousness.

Please put away your yoga mat and the hot stones. We are discussing personal life struggle states.

There are many ways to slice it, so my approach might differ from yours, but bear with me.

We have strengths, even mastery of some areas of life, while being good in others and mediocre or outright ignorant of the rest.

Ignorance

If we were to draw a pyramid, the bottom layer would be where most of the population is—ignorant. I am not being an elitist here; each one of us is basically ignorant, including myself.

In the ignorant state, we let things happen to us, we are victims of happenstance, we have bad habits that penalize us every day, and we do not even know that we do not know. This is the worst state to be in.

I do not have all the solutions for transcending ignorance, but I will borrow from Buddhism, a philosophy I am very familiar with.

Buddhists believe you need to be mindful of your surroundings, constantly empty your mind of preconceptions, and, through rigorous practice, break your way of “logical” thinking, leading to a better intuitive understanding.

As I mentioned, most people do not bother. They are happy to follow others, “work harder”, complain and find excuses instead of putting an effort to achieve transcendence.

Complacement

The next level in our pyramid is a state of complacement. We all reach this level many times in our lives, where we achieve something comfortable and then stop. Although the state of temporary safety feels good, it works against us and ultimately punishes our inactivity.

Seeking

The next layer, I would call the consciousness of the seeker. We know our shortcomings, but we have not overcome them yet. We know what we do not know.

At this stage, developing the right habits and good practices is essential.

Mastery

Sometimes, after putting 10,000 hours of effort into a certain area, we achieve mastery; we are conscious that we know.

Intuitive Mastery

The next level, while still being a master, has to do with intuition. We create art not as a conscious effort or mechanism but because it has become our nature.

Enligtement

The highest level, or rather a top point of the pyramid, is enlightenment, where a few have claimed to sit, but probably nobody really does. I have no ideas, anyway.

Why do I bother thinking about states of conciousness?

As I go thru life, I constantly realize my shortcomings, there are really too many of them to list, but I am definitely guilty of complacement.

As far as this blog goes, it is simply ridiculous that I had it for last twenty some years, including ton of viewership, and a period of failing with both Google AdSense and Amazon Affiliate program and I never developed it to a point of profitable residual income.

I am trying to fix this while developing my passion of writing. This post is an effort of a lunchtime well spent.

The other items that grind my counciousness are YouTube videos and improving my pronunciation. I have real fear and paralysis towards them respectfully. I need to find way to overcome both.

That is all for now, my lunch time is up.

Please write a comment below or "contact me" directly to let me know your feedback, I am flying in the dark otherwise.

The taro-bun grass fed hamburger was first rate, really delicious!

The fries and the coconut water were not so good, but the place is definitely worth returning to, especially that there were several items on the menu I wanted to try.

The views and fresh breeze were splendid!

Pine needle tea for good health

Our modern society lost what was a common knowledge in the old days.  This post is no news to many in outdoors pioneer circles. My mom gathered wild rose hips, herbs like chamomile for tea. I grew up surrounded by alpine forests and frequenting weekend long hikes to mountains.

Yet this one has totally escaped me Pine needle tea!

What was more strange that when I was growing up the lemons were hard to come by, and everyone had to have their tea with lemon, for the taste, and for vitamin C content. Yet, I never have heard of pine tea.

The thing is that pine tea, which we could have in unlimited supply, have about 5 times the amount of vitamin C than lemons or orange juice. American Indians have been using it for that purpose.

Pine needles are, of course, not as tasty as lemon, but once I learned about their quality I decided to fix the situation. I have 3 young White Pines in my garden, hence the easy supply.

The way I prepare the tea is by taking a handful of fresh needles and cut them in the 1/2 inch pieces and add little black tea for flavor and some cardamon spice seeds. I boil the water and steep it all in a French press. When the tea cools down it is a truly good drink.

In addition to immunity-boosting vitamin C, pine needless contain vitamin A that helps eyes and oils that influence digestion and are helpful in aromatherapy of respiratory system. The tea also has antioxidants (flavonoids) that prevent aging and tumor growth by binding free radicals. It is also reported to help with the cardiovascular system.

America is the most romantinc of countries!

I cannot speak for all aspects of american life as being romantic, especially not the corporate life which is devoit of humanity and overly politically correct, but food is a totally different matter!

You see in most of Europe they assume that you are a loner and they serve you appropriatly. Try to get a cup of coffee in Itally and you ind yourself with something that is hard to hold without crashing. Similar way with food.

America is differnt, all into loving shring feelings, they assume that regardless of your current taste you will get a rack of ribs, a bucket of fries or popcorn, and have a gallon of drink.

Oh, of course if your love on doesn't want to share the ribs you ordered.. well you just become a fat pig.

Halwa by Wedel in Poland

I grew up with this sesame treat as well as many other things of which people in Western Europe and USA hardly ever heard of. I guess that is a reminder of having "relations" with Ottoman Empire for hundreds of years.

Slow food

I am a big proponent of "slow food."

At work, current and previous, I always tried to get people out for lunch, sit down, and have a good meal.
I hate "brown bags," I never go to a drive-thru, and I don't like order-in food at work or home.
I like quality food, not too fancy but served esthetically—I love to cook for friends myself, and I like to make wines.

Today, when I got this picture of Lili, I realized how much I miss the European feel of Quebec, with restaurants, cafe shops, and good bakeries on every street corner, where life and food are good.

I went for lunch to the only French bistro in the area, Cafe Pyrenees, in Libertyville, IL, about 6 miles away, only to learn that they are closed until 5 p.m.

Having said that, I also realize that it has been a week since I came back from Quebec, and I did not cook once, not even tea, which I love to drink so often.

I was wandering around the supermarket. I read picture cards about a dozen fish they were selling. I finally knew what Tilapia and Halibut look like and where they come from. I walked out with a couple of bread rolls and a coffee cake.

It's pathetic, but I just have no energy or motivation.
